Turkey Toast Points
- 3 slices sourdough bread*, frozen
- 1 tablespoon olive oil
- 2 tablespoons unsweetened, plain applesauce
- 2 tablespoons mayonnaise
- 3 slices Muenster cheese
- 3 ounces sliced deli turkey
- Garnish: arugula
- Using a long, serrated bread knife in a sawing motion, trim and discard crusts from each frozen bread slice, creating a 3 1⁄2-inch square. Cut each bread square diagonally into 4 equal triangles.
- Preheat oven to 350°. Line a rimmed baking sheet with parchment paper.
- Arrange bread triangles in a single layer on prepared baking sheet. Drizzle 1⁄8 teaspoon olive oil onto one side of each bread triangle. Turn bread triangles over and repeat drizzling with 1⁄8 teaspoon olive oil per bread triangle.
- Bake until slightly golden brown, approximately 7 minutes. Turn bread triangles over and bake until golden brown, 5 to 7 minutes more. Let cool completely on baking sheet.
- In a small bowl, stir together applesauce and mayonnaise. Spread an even layer of mixture onto bread triangles.
- Using a large sharp knife, cut each cheese slice diagonally into 4 equal triangles. Place a cheese triangle on spread side of each bread triangle. Top each with 1⁄2 ounce turkey.
- Garnish with arugula, if desired. Serve immediately.
*We used Pepperidge Farm Farmhouse Sourdough bread.
Make-Ahead Tips: Bread triangles can be cut out a day in advance and stored in an airtight container or bag. Once toasted, use bread within 2 hours.
