Coronation Spread
Serves: approximately 1 cup
- 1 tablespoon unsalted butter
- 1 teaspoon extra-virgin olive oil
- 1 cup chopped yellow onion
- 6 tablespoons Major Grey’s chutney
- 1⁄4 cup plus 2 tablespoons canned tomato purée
- 2 tablespoons water
- 2 tablespoons red wine vinegar
- 1 tablespoon curry powder
- 1 tablespoon fresh lemon juice
- 1 bay leaf
- 1⁄4 teaspoon fine sea salt
- 1⁄4 teaspoon ground black pepper
- 1⁄8 teaspoon crushed red pepper flakes
- In a medium sauté pan, melt butter and olive oil together over medium- high heat. Add onion, reduce heat to medium-low, and cook until tender and lightly golden, 5 to 7 minutes, stirring frequently. (If onion begins to brown, reduce heat.) Stir in chutney, tomato purée, 2 tablespoons water, vinegar, curry powder, lemon juice, bay leaf, salt, pepper, and crushed red pepper flakes, stirring until well combined. Let simmer, stirring occasionally, until sauce is thick (like ketchup), 8 to 10 minutes. Pour sauce into a heatproof bowl and let cool completely. Remove bay leaf. Cover, refrigerate, and use within a day.
